i don't really know what happened but this is the third time that i got this kind of cream cheese filling on my no bake cheesecake. i have made this a couple of times and had the same result- a creamy sweet yummy cheesecake!
but now i don't really know, i was actually planning to blog about this and share this recipe but i ended up sharing this sad news. :(
i cannot afford any more failures especially minding the cost of the ingredients and the stress of finding out that the filling came from fluffy to watery. please help me guys! huhuhu...i'm crying like a baby. :(
this is what i did. i mixed the 2 packs of nestle all purpose cream and condensed milk. sliced the cream cheese at room temperature.when the cream mixture became fluffy i slowly put the cream cheese one by one. then poof! the cream just died.
i added another chilled cream but it didn't come alive. i put it in the fridge for a few minutes and thought it became better so i transferred it on the crust. when it came out the texture was not really good. it's a 360 degrees disaster!

everything was chilled, the condensed milk, the cream, the bowl and beaters of the hand mixer. i don't really know why it came with this texture when i followed the same recipe i did before.
even the swiss meringue frosting came out worse too!
after beating the egg whites and confectioner's sugar in a bowl over simmering water, i mixed with hand mixer until fluffy. the butter was also at room temperature and sliced into small cubes. i slowly added the butter one by one then it became runny and watery. so i placed it on the fridge for five minutes. when it came out, it was okay but became watery for a few minutes.
this double jeopardy! this is double disaster! i feel like giving up. i'm supposed to make this for consignment and i have budgeted the cost of ingredients. this cheesecake is supposed to be in the cafe by next week and i'm expecting orders to line up in the next weeks. i can't give up now and i don't need to make it perfectly, i just need to make it right.
if you have any suggestions please send them in or please share with me any no bake desserts that are also good for consignment that are easy to make so i can substitute while i'm still figuring out what happened. thanks so much in advance!
